Merlot 49%, Syrah 27%, Carignan 24%
Syrah and Merlot from 2 different organic certified estates located in Rabòs and Vilamaniscle. We select the areas with more presence of slate mineral soils and thus with the lowest yield at around 2.000 kg/ha. The carignan comes from La Irola estate.
Hand-picked with 20 kg boxes and grape selection in the vineyard. Grapes harvested at its optimal phenolic ripeness. Each variety is harvested separately.
Grapes are desteemed and then pre-fermented during 2 days. After increasing the temperature we ferment the most in 1.500 – 2.000 liters inox tanks during 16-20 days at an average of 24-26 C. Post maceration of 2-3 days. Combination of pigeage and pumping. Before going to barrels wine overpasses malolactic fermentation.
Aged during 12-14 months in French 225&300L oak barrels. Minimum aging in bottle of 12 months.
Garnet bright and intense colour with inky legs. Complex aromas of figs, plum, black wild fruits, dry flowers, liquorice, balsamic. Freshness in mouth with silky tannins and well integrated oak.
