White vinification classic method sparkling zero dosage blanc de noir.

Long and persistent.

Complex hints of bread crust, yeast, peach and white flowers.
Palate
Crunchy perlage, sapid and fresh notes, juicy and enveloping acidity.
Vinification
The harvest starts around the end of August. We hand-pick the grapes in small crates and we store them in a cool environment at 8°C for one night. A gentle whole bunches pressing process follows. Once the pressing process is over, the must is cold decanted and moved into terracotta amphorae where the first fermentation takes place spontaneously.
The base wine rest on the yeasts for about 3 months and then the second fermentation stars. Second fermentation takes place using the indigenous yeasts from the must of the following year’s harvest. Once this process is over, the wine is aged for more than 3 years on its own yeasts. Disgorgement à al glace with zero dosage liquer. The zero dosage brings out the soul of our Cuvèe della Terra, embodying its strong identity, enhancing its territory and grape varieties.
