Old Tom Gin:
the reinterpretation of a classic

Old Tom was a style of Gin that was very popular in England during the 18th and 19th centuries. It was in particular characterized by a very sweet taste, a characteristic due to the addition of sugar to the distillate carried out in an attempt to mask its pungent taste due to the defects of the distillation of that era. Before the invention of the column still, in fact, it was much more difficult to achieve a sufficiently high level of rectification of the base distillate and it was therefore necessary to correct notes that were not pleasant to the taste through the use of additives that sweetened the flavour. Starting from this point, we have tried to keep the sweet and persuasive style of this ancient gin intact, while purging it of the addition of any sweetener. We therefore searched for traditional Tuscan ingredients, botanicals from our countryside that were naturally sweet and could give a persuasive body to our gin while keeping its origin intact.

Finally, in order to emphasize these characteristics and in line with the practices of the past, our Old Tom rests briefly in French oak barriques, where our wine was previously elevated, for an even more silky and rounded sensation.
