On the nose: medium-high intensity.
In the still glass, primary floral aromas (chamomile flower, geranium), fruit (pineapple and ripe apple) and mineral aromas predominate. When shaking the glass we appreciate the absolute prominence of the secondary ingredients: fermentation, butter, brioche and French pastries. Its passage through a 500l barrel leaves us with memories of vanilla and nutmeg, among others.
In the mouth: it has a lively, electric and dry acidity. We mainly appreciate the citrus peels, fresh apple, sweet spices, vanilla and nutmeg. A complex retronasal stands out, where the aromas that come from aging on lees predominate: buttery, creamy and lactic like lemon yogurt.
In short, we find a creamy, volumetric, well-balanced and persistent wine with a pleasant mineral finish and a peculiar spiciness.
